Chile Verde and Spanish Rice
Chopped Pork 1.5-2 inch cubes
Salsa Verde (check out our salsa verde recipe)
Step 1) Reduce Pork in Enamel
Dumb in pork and burn that fat.
Step 2) Drain the fat, and keep the pork in the enamel.
Step 3) Add the salsa verde and salt to the enamel. Stove top braise that pork with minimum heat and let it cook for 25-30 minutes.
Jasmine Rice (2:1 rice to liquid)
Chicken Stock/Chicken Base
Tomato paste/Stewed tomatoes
Step 1) Put in oil in enamel and add rice. Half way brown, don’t burn it. Keep moving the rice until it’s pearly. Add tomatoe. Keep stirring – Don’t be lazy!
Step 2) Add in liquid, salt (amount to your taste) , and bay leaf.
Step 3) Cover enamel, let boil, bring down the heat to a minimum and let cook for 25-30 minutes.
