Huevos Rancheros

Huevos Rancheros with Poblano sauce

Ingredients:

Tortillas
Eggs
Poblano chiles aka pasilla
Tomates (red tomato)
Cilantro
Garlic
Chile Seranos
Cream

Step 1) Broil Poblano Chiles, garlic and tomates

Put that stuff in a tray and drizzle with olive oil. Broil in oven

Step 2) Fry the tortillas

Heat up vegetable oil in pan and fry those tortillas hard.

The ladies like it hard.

Step 3) Take out the broiled stuff and let chill for 5 minutes.

Take another sip of beer while you wait.

Step 4) Make the Poblano sauce

Peel the chiles and add to blender. Add celery salt, cilantro, cream, tomates, and garlic. Blend that and set aside.

Step 5) Fry eggs how you like it and season with Celery salt for that Chef Louie taste.

Step 6) Assemble those huevos rancheros.

Eggs on top of those tortillas and then add the sauce on top.
