Tacos de Carne Adobada

Ingredients:

Pork Shoulder with bone
Chile Ancho aka Pasilla
Orange Juice
Black pepper
Bayleaf aka lorel
Oregeno
Anise
Cumin
Clove
Garlic
Onion
Paprika sugar
Celeray salt
Olive oil
Onion

Step 1) Make the marinade

Add dry ingredients mix to blender and blend

Dry mix:
Black pepper
Bayleaf aka lorel
Oregano
Anise
Cumin
Clove
Then add sugar, paprika, garlic cloves, orange juice, olive oil, rehydrated dry ancho aka pasilla chiles.

Add a little bit of beer to make it more cholo style

Add a little bit of chile tea water to blender if too thick.

Step 2) Marinade the pork shoulder

Rub the marinade between pork shoulders and add onion slices

Step 3) Marinade overnight 12 hours – Don’t be lazy!

Step 4) Grill and make sure its cooked. Season with Celery salt for that Chef Louie taste.

Step 5) Cut it up and make put it on some tacos.
